Homemade Pop Tarts

Ingredients

Dough

  • 1 1/2 Cup All Purpose Flour

  • 1/2 Tsp Salt

  • 1/2 Stick Plant butter

  • 1/4 Cup Ice Water

Filling

  • 2 Cups Frozen or Fresh Fruit

  • 2 Tbsp Water

  • 1/2 Tsp Chia Seeds

  • 2 Tbsp Sugar (optional)

Frosting

  • 1 Cup Powdered Sugar

  • 1 Tbsp Plant Milk

  • Small drop of Vanilla Extract

  • Food coloring of your choice

Directions

  1. In a food processor, pulse together flour and salt until well combined. With the processor still running, add chunks of butter one at a time. Gradually incorporate ice water until the mixture forms a ball. (If you don’t have a food processor, you can easily do this by hand.) Wrap the dough in cling wrap and refrigerate for at least 30 minutes.

  2. In a saucepan over high heat, combine fruit, water, and sugar. Stir the mixture and reduce to medium heat once it begins to simmer. Continue mixing until the fruit breaks down, then mash it until it reaches a jelly-like consistency. Remove from heat and stir in chia seeds to help thicken. Place in the refrigerator to cool.

  3. Preheat the oven to 375°F. Combine the icing ingredients in a bowl. If you're using natural food coloring, remember that only a small amount is needed, similar to regular food coloring. You may need to add more powdered sugar until the icing reaches a thick consistency.

  4. On a chopping board, sprinkle some flour and use a rolling pin. Divide the dough in half. Roll out one half to about 1/8 inch thick. Cut into rectangular shapes approximately 3x5 inches using a pizza cutter or knife. Repeat with the second half of the dough until you have around 8 rectangles. Place jelly in the center of each rectangle, then cover with another rectangle of dough, ensuring they are as close in size as possible. Seal the edges with a fork and poke a few holes in the top of each tart. Optionally, brush with melted butter.

  5. Bake in the preheated oven for 25 minutes or until the bottoms and sides begin to brown. Allow to cool completely before adding icing. Enjoy!
