Meatless Balls

Ingredients

  • 1 1/2 - 2 cups cooked lentils ⁣

  • 8oz package of baby Bella mushrooms, chopped and sautéed ⁣

  • 1 chopped shallot, sautéed ⁣

  • 3 garlic cloves, sautéed ⁣

  • Handful of fresh basil⁣

  • Handful of fresh parsley ⁣

  • 1 big tablespoon of tomato paste (key)⁣

  • 1 tablespoons of olive oil ⁣

  • 2 flax egg (2 tablespoons of flax seed meal and 3 tablespoons of water) ⁣

  • 6 tablespoons of Parmesan cheese ⁣

  • 1/4 cup of breadcrumbs (might need more depending on texture) ⁣

  • 1 tablespoon Italian seasonings⁣

  • 1 tablespoon fennel seeds⁣

  • 2 tsp of sage ⁣

  • 2 tsp thyme ⁣

  • Salt and pepper ⁣

Directions

  1. Preheat the oven to 375°F.

  2. In a food processor, blend parsley and basil until finely chopped. Then add the remaining ingredients and blend just enough to combine; be careful not to over-blend, as it should remain chunky!

  3. Transfer the mixture to a bowl and mix. It should have a very thick consistency; if it's too loose, add more breadcrumbs.

  4. Shape the mixture into small balls. Sauté them briefly on the stove, then transfer to an oven-safe dish. Bake at 375°F for about 30 minutes, or until they feel firm.

  5. Serve with pasta, in meatball subs, or as Swedish meatballs. Enjoy!
